[Question] Can I survive with eggs being my main source of protein?

Hi! So I just recently moved into my first home. I’m a college student. I’m living off-campus now so I no longer have regular access to dining courts.

Right now, I’m trying to prep my meals. Back when I used the dining courts, I would usually eat eggs + whatever meat is being served (usually ham & turkey, sometimes chicken & beef) + fruits/veggies (cucumbers, tomatoes, carrots, olives, beets, grapes, honeydew melon, & watermelon).

Now, I have to do all the meal prepping and shopping myself.

A store near me sells a dozen medium eggs for $0.65. I love eggs. So I figured I’d have eggs as my main source of protein. Back when I used the dining courts, I used to eat about 12 eggs a day. If I do that, I’ll be spending $4.55 on eggs for the entire week. That doesn’t seem too bad?

I also figured I could add some canned tuna/salmon throughout the week.

I’m trying to avoid cooking meats because, frankly, I don’t know how. I self-taught myself how to cook back when I was vegetarian. Meats seem terrifying to cook. Mostly because of how long they take. So I’m avoiding them. (Unless I want to eat cold cuts)

Along with the eggs & canned/tuna salmon, I’ll probably keep jars of almond butter and cucumbers around. Those will probably serve as my snacks throughout the day. Bell peppers & carrots are two veggies I’m looking at as well. I can dip them in the almond butter, too.

Grapes & olives are my favourite fruits, so I might buy some? I have a soft spot for cherry tomatoes, too.

Apologies for the long post, I’m low-key freaking out about this. When I decided to move off-campus, I was still vegetarian and cooking up everything then was super simple (a lot of eggs then as well!). Now, with a paleo meal, I have to worry more about cooking up my sources of protein.

So, my grocery list will probably be something like (based on what I found at my local store): -7 cartons of a dozen eggs @ $0.65/carton -6 packs of pink salmon (skinless & boneless) @ $1.46/pack -6 packs of solid white tuna in water @ $1.22/pack -2 lb of red grapes @ $2.99/pound -7 green bell peppers @ $0.65/bell pepper -2 packs of shredded carrots @ 1.99/pack

This should give me a total of $35.14 of groceries per week.

My breakfast will probably be 5 eggs + grapes, every day. Lunch & dinner will be a combination of a can of fish + a few eggs. And I can munch of bell peppers & carrots as snacks.

This should require no cooking from my part. At least, until I figure out how I’m going to do the cooking.

Is this a good enough plan for now? Or am I an idiot that’s going to end up in the hospital because I forgot to take in some nutrients?
