Black Drum Recipe with Parmesan Cream Sauce

Are you looking for the perfect date night meal? This is a great recipe to feel like a Top Chef with little effort! 

Black Drum recipeIf you want the full picture of the recipe, scroll down and read it once first before reading this post. Sometimes it helps to get an idea of what you are making before hearing some of the details!

First you have to start with a piece of fish. Preferably go for a mild fish, but this recipe could work with lots of different types. I suggest a Black Drum, but if you can get your hands on a Red Fish that would be great too. These are both fish that are available where I live, in New Orleans, and we tend to pair them with cream sauces. 

So about that sauce… Cream and cheese isn’t Paleo. Well depending on your definition of Paleo. But I think making a homemade sauce without added flour or preservatives is a whole lot better than a pre-made sauce full of extra ingredients. PLUS I am team dairy, when it comes to my ideas of Paleo. You can get high quality dairy from your farmer’s market, or check out a few stores to find what dairy you like. I personally look for a local heavy cream at the Farmer’s Market or if I am at a store, I look for organic heavy whipping cream.

As for the cheese in the sauce, I personally like to buy a block of Parmesan cheese and then grate it myself at home. It melts easier than the cheese that has been grated already. 

Remember when making this sauce, that it’s all about staying very attentive to your sauce! Stirring frequently, adding a little water if it gets too thick, and bringing down the heat or turning it up to get the consistency you want. The sauce is fairly basic compared to most sauces, so if you are new to sauces give this one a try! 

This sauce may be enough for 2-4 dishes, depending on how much sauce you use. You can store it in the fridge for up to 5 days.

Ingredients
  1. 2 russet potatoes, sliced in rounds
  2. 1 broccoli head, cut into florets
  3. 2 black drum fillets
  4. Olive oil
  5. Salt and pepper
  6. ½ lemon, squeezed
Sauce
  1. ½ stick of butter
  2. 1 cup heavy cream
  3. 1 cup of Parmesan cheese, grated
  4. ½ lemon, squeezed
Instructions
  1. Preheat the oven to 400 F.
  2. On a baking sheet, lay the potato rounds flat and drizzle with olive oil, salt and pepper. Bake for 35 minutes total. With 15 minutes left on the timer, add the broccoli florets coated with olive oil, salt and pepper, on another baking sheet.
  3. While these vegetables are baking, make the sauce.
Sauce
  1. In a sauce pan, melt the butter over medium to medium high heat. Allow it to completely melt, but do not brown the butter.
  2. Add the heavy cream slowly, and whisk constantly. This should take about 1-2 minutes to add.
  3. Still whisking, add the Parmesan slowly.
  4. The idea is to keep the heat at a temperature where the liquid is evaporating from the sauce. This will allow the sauce to thicken. If you have thickened it too much you can always add water. If it is not thick enough, turn up the heat.
Fish
  1. After the vegetables are done baking, turn the oven on broil, and allow it to heat up for 5-10 minutes. Season the fish with olive oil, salt and pepper. If your fish is 1 inch thick, place it about 3 inches from the broiler, if it is 2 inches thick, place it 6 inches away from the broiler. Broil the fish for 5 minutes per inch (so a 2 inch fish should be for about 10 minutes).
  2. Serve with the cream sauce on top of the fish and vegetables.

The Skinny Delicious Diet

I was amazed from the very first page. I met the author online some time ago, and I always thought that she’s a woman in her early 30’s. Now, I find that she had embarked on her first nutritional science course more than thirty years ago. Wow! If the author looks like this, I must see what she has to say about a healthy lifestyle.

The book seemed to be promising even from the first pages… “I’d finally made all the connections between the different functions of the body and discovered how to eliminate the garbage and toxins from our cells,” the author wrote.

I know this is what I need; a real alternative to all the “crazy ideas about weight management”. More than this, the information comes from an expert like Beran Parry, who studied nutrition, exercise physiology, integrative medicine and holistic health.

The explanation on Epigenetics was a surprise for me. I just heard of it and its promises touched my mind, “Intelligent nutrition and appropriate exercise promote efficient fat-burning, healthy muscle building, longevity, and wellness. Using your body’s natural ability to respond to good nutrition, we can turn away forever from the nightmare of gaining and storing fat and losing muscle mass. We can reduce the risk of disease and illness.”

Being interested in changing my lifestyle and choosing a healthy path, I found this book to be exactly what I needed to complete all of the knowledge that I’ve acquired until now. The skinny delicious three golden food rules should hang on my wall from now on. There is real wisdom here, and maybe you too would like to read what the author states:

1 – Weight loss is all about insulin
2 – Eating lean… protein but plenty good quality fat
3 – Eat clean

When Beran Parry wrote that grains are not so good for our health, I was so happy. I am probably one of the few people on this planet who doesn’t like grains. My body reacts in an unpleasant way when eating them. But… until now, I had to consume them, not knowing of any another way to feed my body to stop the starving sensation.

I never studied the paleo diets until now but from what I’ve read in Beran Parry’s book, it seems that it includes aliments that my body tolerates very well.

The book contains a 21-day detox program where you can learn how to apply the eating regime to benefit you. Also, it intends to take you out of the victim mindset, so you’ll feel the confidence that comes from daily, planned success.

The Skinny Delicious Diet is a very good book that helps you take control of your health, your weight and ultimately your happiness. It’s not an easy or funny book to read. It contains lots of medical explanations, which help you understand why your body reacts in a specific way and what you have to do to find a proper solution.

Reading Beran Parry’s book, I suddenly started to love my body even more. Until now, I always complained about it because it doesn’t tolerate gluten. I knew that gluten is bad for health, but only from reading this book, I now understood why and how.

When I read the list of foods that you are not allowed to eat, I had a shock. There are some which I agree that it’s a good idea to completely cut off. More than this, I can’t wait to cut them off, but… I don’t think I am ready to renounce on eating cheese and yogurt. I really love them.

What I loved most was the part where the book talks about walking. It’s been one month already since I’ve decided to walk daily, and yes, I can confirm what the author is saying about losing weight only by walking.

In this book, you can also find a section on Pilates. This is a method that I never tried, but I am very curious about.

I recommend reading the book. It is not a common weight loss book; it is very well documented research, based on medical and scientific information. I’ve read several books on this subject until now, but I have to admit that this one is the most complete of all.

What’s in a name

What’s in a name?

My fiancé and I are getting married in 307 days. We’ve been saying for about that long that we’d be going on a diet to be able to look our best for the wedding. Some stats for you: Dylan is 6’4, 225lbs (goal weight: 190lbs), and a quirky and adorable gentleman. I’m Kaitie, and I’m 5’10, 160lbs (goal weight: 135lbs) and have a mouth dirtier than the Taco Bell Combo Burrito I ate for breakfast. That’s where MOST of the “dirty” in this blog comes from, because I can’t speak more than 15 words in a row without cursing. And now that we’re past that, all filters are out the fucking window.

Another thing to know about me: I have no cooking experience. I didn’t own a blender until 20 minutes ago, but I watch just as much Hell’s Kitchen as the rest of you, so I could probably sear a scallop.

Anyway, the other 5% of the “dirty,” and the “REAL” is derived from the fact that nobody can eat 100% Paleo. If you think any of these assholes on Pinterest and Tumblr are eating 100% like our slouched ancestors before us… well, that’s a damn joke. So, we are /mostly/ Paleo.

By this, I mean that we are cutting out the following foods:

  • Gluten of any kind
  • Potatoes/legumes of any kind
  • Cereal grains
  • Corn (is that a cereal grain?)
  • 95% of sugar
  • Dairy
  • Drinks other than water and green tea
  • and anything processed.

We are trying as best as we can to eat only fruits, vegetables, and meats, seasoned with limited amount of salt, and fresh herbs and spices.

Today, while shopping for and starting to cook our first week of Paleo meals, I realized how ridiculously impossible it is to eat THAT clean. I deadass sat in the store staring (sobbing) at the butter, asking myself, “can I really give up BUTTER?”

20 minutes later, the answer was no. For my sanity and for Dylan’s, I will not give up butter. But I’ll use it sparingly. That’s what else is “real” about this blog. We’re going to do our damn best to eat clean, but we’re humans in the 21st century. I lived through the disasters that were 2016 and 2017. I deserve butter and orange juice that I didn’t have to squeeze my damn self.

Also, I’m not going to take 400 years to stage photos of food that probably won’t even taste good. So you’re getting photos straight from my phone. And I won’t spend no $15 on any single ingredient. We’re saving for a wedding– this is Paleo-ballin’ on a budget, my dudes.

Tomorrow is the first day of 2018 and the first day of probably several weeks of caffeine and fast food withdrawal. Happy friggin’ New Year.

OR on Amazon here: my two month progress. In my previous video I believe I was about 27-28 inches and now i'm 26 so about 2 inch difference in my waist. I will create another video with side by side pictures and videos to show the changes. Remember even just one inch makes the biggest difference on your body. I combine waist trainer with a very clean diet and regular exercise. I avoid exaggerated cardio and focus on weight lifting to build muscle. I also am not afraid to eat carbs, if you want a bigger butt do not have a low carb diet. I do not eat dairy and I eat lots of healthy fats.
